Be transported to the sun-kissed fields of Provence with this delicious, healthy dish that’s destined to become a family favourite.

Cook time: 60 mins

Serves 8

Ingredients

Vegetables

2 eggplants

6 roma tomatoes

2 yellow squashes

2 zucchinis

Sauce

2 tbsp olive oil

1 medium white onion, diced

4 cloves garlic, minced

1 red capsicum, seeded and diced

1 yellow capsicum, seeded and diced

Salt, to taste

Freshly ground black pepper, to taste

795g crushed tomatoes

2 tbsp thinly sliced fresh basil

Herb Seasoning

2 tbsp thinly sliced fresh basil

1 tsp minced garlic

2 tbsp finely chopped fresh parsley

2 tsp fresh thyme leaves

Salt, to taste

Freshly ground black pepper, to taste

4 tbsp olive oil

Method

  1. Preheat oven to 190°C.
  2. Using a sharp knife or mandoline, slice the eggplant, tomatoes, squash and zucchini into approximately 1mm-thick rounds, then set aside.
  3. Make the sauce: Heat the olive oil in a 30cm oven-safe pan over medium-high heat.
  4. Sauté the onion, garlic and capsicum until soft, approximately 10 minutes.
  5. Season with salt and pepper, then add the crushed tomatoes. Stir until the ingredients are fully incorporated.
  6. Remove from heat. Add the basil, stir, then add the sauce to the oven-safe pan, smoothing the surface with a spatula.
  7. Arrange the vegetables in alternating slices – e.g. eggplant, tomato, squash, zucchini – on top of the sauce, working from the outer edge to the centre of the pan. Season with salt and pepper.
  8. Make the herb seasoning: In a small bowl, mix the basil, garlic, parsley, thyme, salt, pepper and olive oil, then spoon this over the vegetables.
  9. Cover the pan with foil and bake for 40 minutes. Uncover, then bake for another 20 minutes until the vegetables are softened.
  10. Serve hot as a main dish or a side.
  11. Leftovers will still taste great the next day – cover with foil and reheat to 180°C for 15 minutes, or microwave to the desired temperature.
