Father’s Day is the perfect opportunity to say thank you and show Dad your appreciation for all those late-night lifts and early-morning trips to sports games. So along with a thoughtful Father’s Day gift, how about rustling up some tasty fare that shows how much you care?

From a hearty brekkie to a decadent lunch and classic dinner, we’re giving the latest ovens, microwaves and small kitchen appliances (including coffee machines for that all-important caffeine kick!) a workout with mouth-watering menus for every meal.

Tasty Father’s Day Brekkie

Is your dad a morning person? Start his day right with a hearty plate of Healthy Zucchini Fritters With Red Pepper Dip. The best thing about these delicious morsels is you can prep them ahead of time using a food processor – perfect for maximising your Sunday lie-in!

If Dad’s a fitness fan, put some pep in his step with a nutrient-packed protein smoothie, nicely whipped up in a blender.

Finally, to round off your morning menu, don’t forget the crucial caffeine hit! Bust out his regular order in record time using one of the top-selling coffee machines on the market.

Healthy Zucchini Fritters With Red Pepper Dip

These fab vegetarian fritters, created by Kenwood for the MultiPro Go, are batch-cooked in a muffin pan instead of deep-fried for a deliciously guilt-free party snack. For your catering convenience, make them ahead of time and freeze until required.

Prep & cook time: 35 mins
Serves 4 (makes 24 fritters)

Ingredients

450g zucchini, halved lengthways

30g spring onions                                      

10g fresh basil leaves

2 eggs

Zest of 1 lemon

135g plain flour

1/2 tsp baking powder                 

1/2 tsp salt                                      

1/2 tsp pepper                 

For the red pepper dip:

250g roasted red pepper, from a jar

75g red onion, peeled

2 garlic cloves, peeled

3 tbsp olive oil

1 tsp caster sugar

Grated parmesan cheese, to taste'                       

1 tsp salt                                         

1/4 tsp pepper                                     

Method

1. Preheat the oven to 180°C and line a baking tray with baking paper.

2. Fit the fine grating disc to your MultiPro Go and securely attach the Express Serve lid with a medium bowl underneath the chute. Grate half the zucchini into the bowl using the pusher. Repeat with the remaining half. Use your hands or a cloth to squeeze out excess water from the grated zucchini.

3. Remove the Express Serve attachment and fine grating disc and set aside. Attach the food processor bowl and fit the knife blade. Add spring onions and fresh basil and mix on Speed 1 for 5 seconds until all sliced. Transfer to the bowl containing the zucchini and combine.

4. Add eggs, lemon zest, flour, baking powder and seasoning to the bowl and mix until well combined.

5. Spoon 1 tbsp balls of the fritter mixture onto the prepared baking tray, spaced apart evenly. Use the back of a spoon to flatten each fritter.

6. Bake for 20 minutes. Remove from the oven and allow to cool on the tray for 10 minutes.

7. To make the red pepper dip, clean the food processor bowl and with the knife blade, mix the red pepper, red onion, garlic, olive oil, caster sugar and seasoning at Speed 1 for 30 seconds or until well combined.

8. Serve fritters hot or cold with red pepper dip.

Delicious Father’s Day Lunch (Including A Dad-Approved Dessert!)

Father’s Day is all about spending quality time together, so why not plan a decadent long lunch with three delicious courses set to get you heaps of brownie points?

First up in your fine-dining feast is a warming bowl of Honey-Roasted Pumpkin Soup, created using your air fryer – he’ll taste the love in every spoon and you won’t be stuck scrubbing pots and pans later! Serve with salted butter and crusty bread, gently warmed in the oven.

Honey-Roasted Pumpkin Soup (In Your Air Fryer)

This nourishing pumpkin soup recipe will be ready to enjoy in about half an hour, thanks to the Philips Air Fryer XXL 5000 Series. For a richer, more complex flavour, roast the pumpkin and onion pieces in honey and nutmeg until caramelised.

Preparation time: 10 mins
Cooking time: 22 mins
Serves 4
Ingredients

1kg Kent or butternut pumpkin, peeled, seeded, roughly chopped into 3cm cubes
2 brown onions, peeled and quartered
2 cloves garlic, unpeeled
1½ tablespoons extra virgin olive oil
1 tablespoon honey
¼ teaspoon ground nutmeg
Sea salt flakes and freshly ground black pepper, to season
500ml chicken stock, warmed

Method

1. Put pumpkin, onion and garlic in a large bowl. Drizzle oil and honey over the top, sprinkle with nutmeg and season. Toss to coat.

2. Transfer into the air fryer basket, placing the onion under the pumpkin as much as possible. Set temperature to 200°C and time to 20 minutes, cooking until tender and lightly caramelised.

3. Allow vegetables to cool for 5 minutes. Peel the skins off the garlic.

4. Using a jug blender or stick blender, blend vegetables and stock together until smooth. Season.

5. Divide soup into serving bowls, then serve.

Serving suggestion: swirl sour cream on top of soup and scatter with chives. Accompany with toasted sourdough slices.

Cooking tip:

For a soup with a thinner consistency, simply add extra stock or water in step 3 until desired consistency.

For A Classic Father’s Day Family Dinner

To round out Father’s Day in classic dad style, consider dishing up a tasty roast dinner with all the trimmings, such as this Crackling Pork Roast – crisped up beautifully on the BBQ, no less.

Crackling Pork Roast

Prep & Cooking Time: 60 mins

Serves 4

Ingredients 

1 to 1.5kg rack of pork

Olive oil

Salt

Method

Prepare the BBQ for indirect cooking over high heat (230°C to 260°C). If using a Weber Q set up your BBQ with a convection tray and a trivet.

Dry the skin of the pork and score the skin if the butcher hasn’t done so already. Score through the rind and just into the fat, about 3mm deep and score at approximately 1cm intervals.

Rub a little olive oil all over the pork. Season and rub salt all over, giving the rind a good coating.

Roast the pork over indirect high heat with the lid closed for 20-to-30 minutes to crackle the skin; avoid lifting the lid during this time. Adjust the BBQ temperature to indirect medium heat (190°C to 230°C – ‘roast setting’), continue to cook for the remaining cooking time.

Once the pork has cooked, remove from the BBQ and allow to rest for at least 5 to 10 minutes before carving.

TIP: If the pork has cooked but the rind hasn’t crackled, remove the rind and return the rind to the BBQ and roast over indirect medium heat (190°C to 230°C) for 15 minutes to crackle whilst the pork roast is resting.

Blueberry Brioche Pies

Preparation time: 5 mins
Cooking time: 7 mins
Serves 4

Ingredients

4 slices brioche bread, cut into 24 pieces
⅓ cup fresh or frozen blueberries
3 eggs, whisked
¼ cup sugar
¼ cup milk
1 tsp vanilla essence

Method

1. Place 6 pieces of brioche into each Sunbeam Pie Maker dish and divide blueberries on top.

2. In a jug, whisk together eggs and sugar. Add milk and vanilla essence.

3. Pour mixture over brioche cups.

4. Close the lid and turn on the appliance, cook for 7 mins.

5. Turn the Sunbeam Pie Maker off and allow pies to sit for 2 mins.

COOK’S TIP

Dust pies with icing sugar; serve with cream and maple syrup.
