Make These Healthy Recipes In Your Microwave

You won’t run short of easy dinner ideas any time soon with a Hisense microwave. Here are three healthy dinner recipes to get you started.

 

Microwave Mushroom Risotto

This delicious, quick risotto recipe is ready in under 30 minutes, and  destined to become a firm family favourite.

 

Ingredients

60g butter, chopped

1 leek, washed, halved, thinly sliced

1 garlic clove, crushed

1 cup arborio rice

3 cups chicken-style liquid stock

400g mushrooms, sliced: Swiss brown, button or shiitake

50g parmesan cheese, finely grated

1/4 cup flat-leaf parsley leaves, chopped

Salt and pepper, to season

 

Method

  1. In a large, microwave-safe bowl or rice cooker, combine butter, leek and garlic.
  2. Cover loosely and microwave on High (100%) for 2 minutes or until the leek is soft.
  3. Stir in the arborio rice and coat in the butter mixture then microwave uncovered on High (100%) for 1 minute.
  4. Stir in 2 cups of liquid stock, cover and microwave on High (100%) for 5 minutes.
  5. Microwave for a further 7 minutes on Medium (50%).
  6. Add mushrooms and remaining stock. Cover and microwave on Medium (50%) for 7 minutes.
  7. Allow to stand while covered for 5 minutes.
  8. Add parmesan cheese and parsley leaves, season with pepper and stir to combine.

 

Three Cheese Jacket Potato

This deeply satisfying winter warmer is dig-in ready in under 10 minutes.

    Ingredients

    Any large potato

    2 tbsp soft cheese or butter

    Cheddar cheese, to your liking

    30g mozzarella, or any other cheese of your choice

     

    Method

    1. Wash your potato thoroughly and poke holes all over it with a knife or fork.
    2. Cook in the microwave for 5 minutes, then check if it’s done with a fork.
    3. Repeat until the potato is cooked thoroughly.
    4. When the potato is cooked, remove to add the soft cheese or butter, cheddar and mozzarella.
    5. Put the potato back into the microwave and switch to the grill setting, which melts the cheese and gives a baked and crispy finish to the potato skin.
    6. Add additional toppings from your fridge or cupboard, such as tuna, beans or chilli, and serve with a side salad.

     

    Omelette For One

    You can stop Googling “how to cook eggs in the microwave”: this quick omelette recipe makes a great light lunch or dinner for one in minutes.

     

    Ingredients

    1 tsp of butter

    2 large eggs

    Pinch of salt and pepper

    Cheese of your choice and to your liking, grated

    Additional fillings, such as spinach, onion, pepper, tomato, bacon, chorizo, finely chopped

     

    Method

    1. Pop any additional fillings into the bottom of a large, microwave-safe mug, alongside a teaspoon of butter.
    2. Microwave on High for 30 seconds to melt the butter and warm the fillings.
    3. Crack your eggs into the mug, then whisk until all contents are spread evenly throughout.
    4. Add a pinch of salt and pepper and mix through.
    5. Microwave on High for 20 seconds, take out and mix again. Repeat this twice
    6. Then let it stand inside the microwave for 30 seconds to allow the egg to set.
    7. Remove mug from microwave and top with cheese.
    8. Cover the mug with a tea towel or aluminium foil, and allow the omelette to set and cheese to melt so it’s ready to eat.
