Blueberry Scones Recipe

These homemade scones will be ready to serve in less than 15 minutes making a lovely hassle-free addition to your Mother’s Day celebration. The blueberries will give mum a health boost with their vitamins and antioxidants. Plus, they’ll give your scones an extra burst of natural sweetness – yum! 

Fresh baked blueberry muffins with melted butter

Prep time: 5 min

Cooking time: 8 min

Makes about 9

Ingredients:

  • 1 cup self-raising flour, plus extra for dusting
  • 1 tablespoon caster sugar
  • 20g butter, cold, chopped
  • 100ml milk
  • ¼ cup blueberries
  • Jam or butter, to serve

Method:

  1. Put flour into a large bowl and stir in sugar. Rub in butter using fingertips until fine crumbs form.
  2. Pour in milk and stir using a butter knife, mixing to form a soft shaggy dough. Turn dough onto lightly floured surface.
  3. Add blueberries and knead briefly and gently with your hands until just smooth. Use your hand to press dough out evenly into a disc, approx. 2cm thick.
  4. Using a knife dusted in flour, cut dough into 9 equally sized rectangular pieces.
  5. Line the basket of the Russell Hobbs 8 Litre Satisfry Extra Large Air Fryer with a sheet of baking paper and place dough pieces inside, in a single layer.
  6. Set the temperature to 200C and time to 7 minutes. Cook until golden brown. Set aside to cool for 5 minutes then serve with jam or butter.

Gooey Chocolate Pancakes Recipe  

There’s nothing like waking up to the smell of warm pancakes, and thanks to our friends at Westinghouse, we’ve got the perfect gooey chocolate pancake recipe for you to whip up for Mum. Plus, if you want to earn some extra brownie points, don’t forget to clean up the mess in the kitchen – we are sure Mum will appreciate this!

Makes about 12

Ingredients:

  • 4 tbsp chocolate spread 
  • 250mls buttermilk 
  • 60g castor sugar 
  • 2 tsp baking powder 
  • 1 tsp bicarbonate soda 
  • 2 large eggs 
  • 250g plain flour 
  • 60g melted butter 
  • 1 large banana 
  • 2 tbsp butter 

To Serve: 

  • Maple syrup 
  • 1 cup fresh blueberries 
  • To Serve

Method:

  1. In a large bowl sift together the flour, sugar, baking powder and bicarbonate soda. Whisk the eggs with the buttermilk and melted butter. Combine the dry and wet ingredients into a lumpy batter, being careful not to over mix. 
  2. Heat some butter in a pan over medium heat. Spoon some batter into the pan and sprinkle the top with some of the blueberries. Wait until bubbles that arise start to pop (about 30 seconds) and then carefully flip to cook on the other side. 
  3. Slice banana on an angle. 
  4. Stack on a plate and sandwich together with chocolate spread and banana and serve with lashings of maple syrup and fresh berries.
