Italian Pesto Twice Baked Potatoes

Level up game-night dinner with this Italian spin on jacket potatoes. With your KitchenAid Go Cordless Hand Mixer, you can whip up the tasty filling well in time for kick-off.

Cook time: 2 hours
Serves 4
Ingredients

  • 4 Russet potatoes
  • Olive oil cooking spray
  • Salt and pepper, to taste

For the filling:

  1. 3/4 cup buttermilk
  2. 3/4  cup plain whole milk, Greek yoghurt or sour cream
  3. 2 tbsp extra virgin olive oil
  4. 2 tbsp melted butter
  5. 1/4 cup prepared pesto
  6. 1/2 tsp garlic powder
  7. 1/2 cup shredded parmesan, plus 1/4 cup for sprinkling on top
  8. 55g (2oz) diced pancetta, cooked, for sprinkling on top

Method

  1. Position one oven rack in the upper middle position. Preheat the oven to 425ºF/220ºC/gas 7. Line a rimmed baking sheet with parchment paper and place scrubbed potatoes onto the pan.
  2. Pierce potatoes all over with a fork.
  3. Bake for 60-75 minutes, or until a knife easily pierces through to the centre.
  4. Remove the potatoes from the oven and allow to cool for 10 minutes, or until cool enough to handle with your hands.
  5. To make the potato shells, use the paring knife to cut the potato in half lengthwise.
  6. Use a spoon to scoop out the flesh from each half into the large bowl, leaving a 1/4” layer of potato to hold the shape of the shell.
  7. Place the shell back on a parchment-lined baking sheet and repeat the process for the other potato halves.
  8. Lightly spray the interior and exterior of the shells with olive oil spray. Sprinkle with the salt and pepper and set the shells flesh side down onto the baking sheet. Place in the oven and bake until the skins begin to crisp, 10-12 minutes.
  9. While the skins are crisping, make the filling. Fit the KitchenAid Go Cordless Hand Mixer Matte Black with the beaters. Place the beaters in the bowl with the potato flesh, turn to speed 5 and mix until potatoes are mashed, about 1-2 minutes.
  10. Stop the mixer. Add the buttermilk, sour cream, olive oil and melted butter.
  11. Place the beaters back into the bowl and turn to speed 2. Mix until incorporated, then increase to speed 6 and mix until fluffy and creamy, about 1 minute longer.
  12. Stop the mixer. Add the pesto, garlic powder, and 1/2 cup of parmesan cheese and place the beaters back into the bowl and turn to speed 5.
  13. Mix until thoroughly combined, 1-2 minutes. Turn off the mixer.
  14. Turn the crisped shells over on the baking sheet. Spoon the mixture into the shells, mounding at the centre, and generously top with the remaining parmesan cheese and pancetta.
  15. Place the potatoes back into the oven and broil until the tops are crisp and spots have browned, about 3-5 minutes. Let cool for 10 minutes before serving.

Spiced Fig Jam

Ingredients

  • 225g (8oz) dried black mission figs, stems trimmed
  • 1/2 cup pinot noir wine
  • 3 tbsp white sugar
  • 2 tbsp freshly squeezed lemon juice
  • 1/2 tsp lemon zest
  • 1 tsp garam masala
  • Pinch of sea salt
  • 1/4 tsp cayenne pepper (optional)

Method

  1. Place the dried figs and the pinot noir into your saucepan and cover the pan. Turn the heat to medium and allow the figs and wine to simmer for 10-12 minutes or until figs have softened.
  2. Turn off heat. Add remaining ingredients into the pan.
  3. Fit the pan guard onto your KitchenAid Go Cordless Hand Blender arm, then attach the arm to the motor body.
  4. Set the blender arm blade over a fig and press the variable speed controller for 2 seconds.
  5. Release the variable speed controller, set the base of the blender arm over another fig, and repeat the process until all of the figs have been broken down.
  6. Proceed to move the blender arm throughout the mixture until the mixture is completely smooth.
  7. Store jam in an airtight container in the refrigerator for up to one week.

Creamy Roasted Cauliflower Soup

Serves 6

Ingredients

  • 1 medium white onion, chopped
  • 3 garlic cloves, peeled
  • 1 large carrot, cut into 5cm pieces
  • 2 celery stalks, cut into 5cm pieces
  • 600g cauliflower florets
  • 1/4 cup olive oil
  • Salt and pepper, to taste
  • 4-5 cups broth of choice
  • 1/2 tsp lemon zest
  • 1/8 tsp nutmeg
  • 1/2 cup heavy cream, optional
  • 1/4 cup packed fresh Italian parsley, minced, to serve

Method

  1. Preheat the oven to 400°F/200ºC. Line a baking sheet with parchment paper and put onion, garlic, carrots, celery and chopped cauliflower onto the pan.
  2. Drizzle with olive oil, sprinkle lightly with salt and pepper, toss to coat, then roast for 25-30 minutes, until vegetables are caramelised in spots.
  3. Add the whole pan of roasted vegetables to the Dutch oven. Add broth and turn heat to medium high until a high simmer is reached.
  4. Stir and reduce heat to medium low, cook for 15-20 minutes.
  5. Turn off heat and add the nutmeg, lemon zest and heavy cream.
  6. Fit the pan guard onto your KitchenAid Go Cordless Hand Blender blending arm, then attach the arm to the motor body.
  7. Fully submerge the blending arm into the soup and, with the arm at a slight angle in the soup, press the variable speed controller for 2 seconds.
  8. Submerge the blending arm in a different part of the pot and, while holding it at a slight angle, press the variable speed controller for 2 more seconds.
  9. Proceed to blend portions of the soup in 2 second intervals until soup is creamy and some cauliflower florets remain for texture if desired.
  10. Remove the blender from the soup. Taste for seasoning, adding salt and pepper if desired.
  11. Stir in minced parsley and serve hot.
